Patagonian Toothfish is caught via three methods by Austral Fisheries - these are trawl, longline and traps.  Austral Fisheries is methodically working towards a higher proportion of toothfish caught by longline and trap methods as they target a larger size fish, therefore reducing the number of immature toothfish caught.

Patagonian Toothfish is one of the world’s premium table fish.  Its white flesh, even texture and subtle flavours are highly prized by chefs around the world.  Patagonian Toothfish can either be supplied directly from the vessel or further processed to your specifications.

    

 

Mackerel Icefish
Champsocephalus gunnari

This is a species unique to the sub-Antarctic and is trawled by Austral Fisheries in Australian waters around Heard Island.  Icefish was the first finfish in Australia to be certified by the international Marine Stewardship Council (MSC) as coming from a sustainable and well managed fishery.  MSC certification for Mackerel icefish has just passed its 5 yearly review – a process that ensures we are continuing to fish responsibly and sustainably for this species.

The flesh of Icefish is fine textured, white in colour and one of the worlds best kept secrets.  Icefish have very high levels of Omega 3, polyunsaturated fatty acids and can be consumed whole. Icefish are generally between 24cm and 36cm in overall length.
