Prawn Linguini with Chilli & Basil
1 x 250g pkt Wild Australian Prawn Co Banana Prawns (defrosted)
1 Red chilli (sliced)
2 cloves Garlic (chopped)
125g Cherry tomatoes (cut in halves)
½ cup Basil leaves
3 tbs Olive oil
2 tbs Grated parmesan cheese
Salt and pepper
- In a saucepan of boiling salted water cook the linguini according to the instructions on the packet.
- When the linguini is almost ready, heat a frying pan over medium high heat and add the olive oil and prawns with a little salt and pepper and cook for 2 minutes.
- Add the garlic and chilli, continue to cook for 1 more minute then add the basil leaves. 4. Remove from the heat, strain the linguini and put back into the saucepan.
- Add the prawn mixture and the parmesan, toss through serve into warm bowls.
