Prawn Linguini with Chilli and Basil

INGREDIENTS:

1 x 250g pkt Wild Australian Prawn Co Banana Prawns (defrosted)
250g Linguini
1 Red chilli (sliced)
2 cloves Garlic (chopped)
125g Cherry tomatoes (cut in halves)
1/2 cup Basil leaves
3 tbs Olive oil
2 tbs Grated parmesan cheese
Salt and pepper

METHOD

  1. In a saucepan of boiling salted water cook the linguini according to the instructions on the packet.
  2. When the linguini is almost ready, heat a frying pan over medium high heat and add the olive oil and prawns with a little salt and pepper and cook for 2 minutes.
  3. Add the garlic and chilli, continue to cook for 1 more minute then add the basil leaves. 4. Remove from the heat, strain the linguini and put back into the saucepan.
  4. Add the prawn mixture and the parmesan, toss through serve into warm bowls.

Cook: 15 mins
Serves: 4 (Entree) or 2 (Main)
