Spicy Prawn, Spring Onion & Tomato Soup
1 x 250g pkt Wild Australian Prawn Co Banana Prawns (defrosted)
420g Tin Condensed Tomato Soup
250ml Fish stock
150ml Coconut milk
1 cup Chopped spring onion
1 tbs Chopped garlic
1 tsp Curry powder
1 tbs Vegetable oil 2tsp Soy sauce
Sliced spring onion
Toasted sesame seeds
Chilli flakes (optional)
- In a saucepan over medium high heat add the oil, when hot add the chopped spring onion & garlic, cook whilst stirring until soft but not brown, stir in curry powder.
- Season the prawns with the soy sauce and cook for 2 minutes with the onion & garlic mix.
- Add the fish stock & tomato soup, allow to heat, just as it is about to boil stir in the coconut milk.
- Serve into bowls, scatter over the sesame seeds, sliced spring onion & chilli flakes
