Mediterranean Prawn Soup
1 x 250g pkt Wild Australian Prawn Co Banana Prawns (defrosted)
420g Tin Condensed Tomato Soup 250ml Fish stock
½ cup Chopped onion
½ cup Chopped red capsicum
1 tbs Chopped garlic
1 tsp Paprika
1 tsp Dried oregano
1 tbs Olive oil Salt & pepper
Fresh oregano or parsley leaves
- In a saucepan over medium high heat add the oil when hot add the onion, capsicum & garlic, cook whilst stirring until soft but not brown, stir in paprika & dried oregano.
- Season the prawns with salt & pepper and cook for 2 minutes with the onion & capsicum mix.
- Add the fish stock & tomato soup, allow to heat, just as it is about to boil stir in the cream.
- Serve into bowls, crumble a little feta cheese & scatter over with a few black olives & the oregano or parsley leaves. Drizzle with yoghurt if desired.
